Pumpkin and Black Bean Soup

Oh Lordy! This soup is amazing.  Pair this with a grilled sandwich and treat yourself right.  This is so great for you and what a great meal for this time of year. Fall Rules.  I love the one pot here, with most of my meals, that is the goal!

2 tbs olive oil
1 med. onion, finely chopped
3 cups organic vegetable stock
1 14.5 oz organic diced tomatoes in juice
1 15 oz black beans, drained
2 15 oz organic pumpkin puree
1 cup heavy cream or soy milk, but I recommend heavy cream
1 tbs curry powder
1 1/2 tsp cumin
1/2 tsp cayenne pepper
coarse salt
fresh chives, chopped for garnish

1. Heat a large pot over med. heat. Add oil and when hot, add onion and saute for 5 mins. Add broth, tomatoes, black beans, and pumpkin puree. Stir ingredients together and bring to a boil. Reduce heat to med. and stir in cream, curry, cumin, cayenne pepper, and salt to taste. Simmer 5 mins. and garnish with fresh chives. WOW! Inspired from Racheal Ray.
