Fresh Tomato Soup

It is that time of year where I make soups and stews weekly. Here is another great recipe for Tomato Soup. Easy Breezy, too.  You will also love my Double-Tomato Soup.  Enjoy~

Serves 6

2 cups vegetable stock
1 cup chopped onion
3/4 cup celery
1 tbs thinly sliced fresh basil
1 tbs tomato paste
2 lbs plum tomatoes, cut into wedges
1/2 tsp salt
1/4 freshly ground pepper
6 tbs yogurt, I use greek-style
3 tbs thinly sliced fresh basil

1. Combine first 6 ingredients in a large sauce pan; bring to a boil. Place half of tomato mixture in a blender. Remove center piece of lid so it can steam; secure lid on blender. Place paper towel over opening. Blend until smooth. Pour into a large bowl. Repeat with remaining tomato mixture. Stir in salt and pepper. Serve in bowls and Top with yogurt and basil.
