Easy Cheesy Omelet. Here is your next “B,L,D” entree: (breakfast, lunch, dinNer!!).
Let’s make an incredibly delicious spinach, onion, mushroom omelet together. I call this my easy cheesy omelet that’s an entrée perfect for breakfast, lunch or dinner. Add anything you want and a special thanks to Desert Pepper for the delicious salsas that really elevate this dish to that next level. I am a huge fan of all their products. Let’s begin…
Easy Cheesy Entree Omelet
Ingredients
• 3 large eggs
• 1-2 tablespoons butter
• 1 cup fresh spinach, chopped
• 1 small onion, diced
• 1/2 cup mushrooms, sliced
• Salt and pepper, to taste
• 2 tbsp Desert Pepper Chile Con Queso
• 2 tbsp Desert Pepper Cantina Salsa, for topping
Instructions
1. In a skillet, heat the butter over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add the mushrooms and cook for another 3-4 minutes until they soften. Stir in the spinach and cook until wilted. Season with salt and pepper. Remove the mixture from the pan and set aside.
2. In a bowl, whisk the eggs with a pinch of salt and pepper.
3. In the same skillet, add a bit more butter if needed. Pour in the whisked eggs and let them cook undisturbed for a minute or so until they start to set.
4. Once the edges begin to firm up, add the sautéed veggie mixture and now add drizzles of the cheese queso on one half of the omelet. Carefully fold the other half of the omelet over the filling. Cook for another minute until the eggs are fully set.
5. Slide the omelet onto a plate. Top with salsa. Serve with some favorite veggies or a fresh salad and you have a perfect entrée breakfast, lunch or dinner. Enjoy!
