Salsa Black Bean Soup

Another great Moni Soup Recipe.  As with many of my Moni Meal Recipes,  I created this based on all that I hade in my pantry.  Viola!  I just love the flavors. I love the texture and you will not miss any meat!  This is so easy and using a bottle of salsa is so handy and flavorful.

You could add some sour cream on top as well to finish it off.

1 tsp  oil
1 tbs minced garlic
2 cups water or vegetable broth, low-sodium
1/2 tsp chipotle chile powder
3 (15-oz) cans black beans, rinsed and drained
1 (8-oz) bottle salsa
1 tbs fresh lime juice
1/2 cup chopped fresh cilantro, optional
1/2 cup shredded Monterey Jack cheese

  1. Heat oil in a large saucepan over medium-high heat. Add garlic; saute 1 minute. Stir in water, chipotle powder, beans, and salsa. Bring to a boil; reduce heat, and simmer 1 minute.
  2. Place 3 cups of black bean mixture in a blender; process until smooth. Return pureed mixture to pan. Stir in lime juice; simmer 10 minutes. Remove from heat; stir in cilantro, if using.  Sprinkle each serving with cheese.
