This dish is so SIMPLE. You might have a lot of the ingredients on hand already. The peanut butter turns this into a savory dish and compliments the other ingredients very well. It is slightly sweet from the peanut butter and tomatoes and slightly spicy from the chile sauce but together just right. It is a must have. Also try my Crisped Tofu with Greens and Peanut Dressing. Serves 6
2 12 oz pkgs of extra firm tofu, cut into 1/2 thick slices
1 tbs canola oil
1 small onion, finely chopped (about 3/4 cup)
1/2 cup diced canned tomatoes, drained
1 tbs tomato paste
1 1/2 tsp chile-garlic sauce, like Huy Fong
1 1/2 tsp. dried thyme
1/2 cup crunchy or creamy peanut butter, I always do crunchy
1/2 cup green beans
Peanuts-optional for topping
1. Preheat oven to 350 F. Coat a 13 by 9 inch baking dish with cooking spray and place tofu slices on the bottom.
2. Heat oil in a saucepan over med. heat. Saute onion in oil for about 5 mins. Add tomatoes, tomato paste, chile-garlic sauce, thyme, and saute for about 1-2 mins. Stir in peanut butter, green beans, and 1/2 cup water, and bring to a simmer.
3. Place peanut sauce over sliced tofu, cover with foil and bake about 5-7 mins. Remove from foil and bake 5 min more, or until heated through. You can toss with peanuts if using. 🙂
