Thai Summer Slaw

This is awesome. Such Vibrant colors too. 🙂 When you think of Thai flavors, you don’t necessarily think of a Slaw mix.  I love this.  It is full of healthy vegetables and amazing flavors that work so well together. Make the dressing separate so then you can make it ahead and put it all together last minute. If you like cilantro you can add, but for me, I usually skip.

10 Servings.

SLAW:
3 cups sliced napa
1/2 cup julienne-cut yellow squash
1/2 cup julienne-cut zucchini
1/2 cup julienne-cut red bell pepper
1/2 cup julienne-cut yellow bell pepper
1/2 cup julienne-cut seeded, peeled cucumber
1/2 cup shredded carrot
1/4 cup sliced green onions
1/4 cup radishes
1 inced seeded jalapeno pepper

DRESSING:
3 tbs fresh lime juice
1 tbs fish sauce
1 tbs water
1 1/2 tsp sugar
1/2 tsp chile paste with garlic (You could use Sirarchi)

1. Combine all the slaw ingredients in a large bowl.

2. Combine all the dressing ingredients in a small bowl and whisk together. Drizzle over slaw and toss to coat.
