Goat Cheese and Roasted Corn Quesadillas

I am happy to report, this is a tasty, very flavorful new way to do a quesadilla! To keep Vegetarian, use meat-less “strips” but this would be a great recipe to add chicken to if you prefer. You also can just  keep it plain (it is fantastic too)- or try tofu, tempeh, or seitan.  I like using corn tortillas rather than flour.

I highly recommend browning the corn because it will caramelize and deepen the taste of the dish. I serve this with black beans and rice.  Enjoy!

Makes 4 servings

1 cup fresh corn kernels
2/3 cup goat cheese, softened, secret ingredient
chicken strips, meat-less strips, tofu, tempeh, or seitan all work!, cooked-(optional)
8 corn tortillas
1/4 cup tortilla green onions
salsa verde
salsa
sour cream
Cooking spray

1. Heat a skillet over med-high heat. Add corn; saute 2 mins until browned. Place corn in a bowl and add goat cheese to the corn; stir until well blended. Divide corn mixture among 4 quesadillas, spread evenly. Add protein of choice if using. Sprinkle each tortilla with green onion. Drizzle with just a spoonful of salsa verde and then top with remaining tortilla.

2. Heat pan over med-high heat. Coat pan with cooking spray. Place quesadillas in pan; cook about 2 mins on each side or until golden. Remove and then place the remaining quesadillas and repeat procedure. Cut into 4 wedges. Top with more salsa and sour cream. Enjoy!
