Couscous Cakes with Feta and Green Onion, Over Tomato-Olive Salad

Talk about presentation.  I am getting fancy over here!  Easier than you think to put together and a great for you too. I love the salad alone but then having my Moni Couscous Cakes, just tops it right off into a wonderful Moni Meal!

Perfect again for Summer especially with all the tomatoes in season.

NOTE: You might want to just double everything to make  more servings on the cakes. 😉

Makes 2 Servings

CAKES:
1/3 cup uncooked whole-wheat couscous
1/2 cup boiling water
2/3 cup crumbled feta cheese, secret ingredient
1 egg
2 tbs finely chopped green onion
1/8 tsp freshly ground black pepper
2 tsp Olive oil

SALAD:
2/3 cup chopped seeded tomato
2 tbs chopped pitted kalamata olives
2 tbs fresh parsley
2 tsp red wine vinegar
1/2 tsp olive oil
1/8 tsp freshly ground black pepper
3 cups gourmet salad greens

1. Place couscous in a med. bowl; stir in 1/2 cup boiling water. Cover and let stand 5 mins. Fluff with a fork. Cool slightly. Add cheese and the next 3 ingredients though pepper. Heat 2 tsp oil in a non stick pan coated with cooking spray over med.-high heat. Spoon about 1/3 cup couscous mixture into 4 mounds in pan. Lightly press with a spatula to flatten to 1/2 inch. Cook 2 mins or until golden browned. Coat tops with cooking spray and carefully turn over and cook 2 mins longer.

2. Combine tomato ans next 5 ingredients through pepper. Arrange salad greens on 2 plates. Top with tomato mixture and arrange 2 cakes over tomato mixture. So Fancy!
