This meal is very Mediterranean and delicious! I seem to always have a ton of carrots, that is how this started. This is so healthy and easy to put together. Talk about affordable too, a bag of lentils will last you forever. I pair this with a nice salad and call it Meal time! This meal is hearty and filling, enjoy!
Serves 4
3 tbs extra-virgin olive oil
1 1/2 cups thinly slices onion
1 garlic clove, minced
1 tbs tomato paste
1/2 tsp pepper
1 lb carrots, halved and thinly sliced, about 3 cups
3/4 tsp sea salt, divided
3 cups water
1 cup uncooked dried lentils
1/4 tsp freshly ground pepper
1/4 cup Greek Yogurt
Fresh Dill for toppings
1.Heat oil in a large sauce pan over med-high heat. Add onions, cook until lightly browned. Add garlic, cook for about 1 min. and then stir in tomato paste and pepper. Stir in carrots and 1/4 tsp salt and cook 1 min. Remove from heat.
2. Combine 3 cups of water and lentils in a large sauce pan and bring to a boil. Cover and and simmer for about 30 mins. Uncover and increase heat to med-high and stir in onion mixture, cook 2 mins or until most of the liquid is evaporated. Stir in in remaining 1/2 tsp salt and freshly ground pepper. When cooled top with the yogurt and garnish with Dill. Enjoy!
