Chive and Walnut Cheese Bites

These are tasty little starters to any dish. Think about these flavors…Chives, Walnuts, Cream Cheese with some Smoked Paprika and shallots in the background.  Hmmm, are you sold? The key is toasting the Walnuts to get that flavor.  Also you can get creative here.  Maybe roll half in only walnuts and the other half in only chives, (like me,) or maybe you will come up with something even better!…

I use tofu cream cheese but regular is fine too. They are easy to assemble and make a good amount.  Enjoy~

Serves about 25-30

1 1/2 cups walnuts, divided
16 oz tofu cream cheese, or regular/reduced-fat is fine too
1 cup finely chopped chives, divided
1/2 small shallot, minced (1 tbs)
1/4 tsp smoked paprika

1. Preheat oven to 350 F. Spread walnuts on baking sheet, and bake 8 to 10 minutes. Cool and grind finely in a food processor.

2. Stir together cream cheese, 3 tbs chives, shallot, smoked paprika, and 3 tbs walnuts until smooth. Season with salt and pepper. Scoop mixture into 2 tsp-size balls. Roll half in remaining chopped chives and half in remaining walnuts. Serve immediately.
