So Delicious and Healthy. These flavors just can’t go wrong together! Grilling is never a bad idea either. Fresh lemon here really gets the flavors to pop. I like this for a side dish especially during Summer. I make dishes like this all the time and it so nice to have on hand too.
This makes a great topper too, especially for pasta-like 12 oz penne or rigatoni. Also, can be served hot or cold.
Serves 6
2 lbs med zucchini (about 6), halved lengthwise
1 tsp plus 1 tbs olive oil
6 scallions, sliced
2 tbs lemon juice
1/4 tsp crushed red pepper
salt
1. Heat grill to med-high. Brush zucchini with 1 tsp of the oil and grill until tender about 5-7 mins per side.
2. Cut zucchini into 1-inch pieces and toss in a large bowl with scallions, lemon juice, red pepper, the remaining 1 tbs of oil, and 3/4 tsp salt. Serve at room temperature. Yum!
