This dish is so SIMPLE. I wanted a simple Spring inspired meal and well, here it is. Gorgonzola cheese is an Italian blue cheese and all the flavors blend very well together. I like ziti but you can use penne or rigatoni. This is still a healthy dish for you, not to mention creamy and vibrant. You might want to double it for left overs. You will love how FRESH this taste. 😉
