If salmon is cooked just right, I really love it! Well thank goodness for this Moni Meal. Another easy and fast fish marinade. This is so fresh and refreshing! I am so in love with the marinade. You might find that you have all the ingredients on hand too. Serve with your favorite sides. I steam up some broccoli or whatever fresh veggies I have and add that to the plate. I like brown rice here too.
Makes 4 Servings
2 tbs fresh lemon juice
2 tbs maple syrup
1 tbs cider vinegar
1 tbs canola oil
4 skinless salmon fillets
1/2 tsp salt
1/4 tsp freshly ground pepper
Cooking Spray
1. Preheat broiler.
2. Combine first 4 ingredients into a zip loc bag. Add fish to bag and refrigerate for about 10 mins.
3. Remove fish from bag, reserving marinade. Put marinade in a bowl and microwave for 1 min on High.
4. Heat a large skillet over med-high heat. Sprinkle fish with evenly with salt and pepper. Coat pan with cooking spray. Add fish to pan, cook about 3 mins. Turn fish over. Brush marinade evenly over fish. Broil 3 mins or until fish flakes easily with a fork. The broiler will leave the fish with a nice glaze. Enjoy!
