Quinoa Breakfast with Walnuts

Here me out on this.  So you will usually always think of Quinoa as a lunch or dinner ingredient but for a few years now, (along with couscous/brown rice), I have it for breakfast every now and then as well.  As an athlete, I need FUEL and a fat-free muffin ain’t gonna cut it!

Also… Remember my Greek Yogurt with Brown Rice, Chia Seeds, and Fruit Parfait Breakfast? That is also sooooooooo good too and with the same idea…Tasty, Fast, and Healthy, and will keep me energized all morning.

TIP: (the only time saving tip to remember here is try to make a big batch of quinoa for your week. This way, you can just put this together in no time, which is why breakfast is tough…usually no time!)

This is pretty much the healthiest Breakfast you can have.  A good carb, good protein, and good fats from the walnuts. It is also really tasty and unique.  Give it a shot and let me know what you think….
