Banana-Oatmeal Chocolate Chip Cookies

I just made these and WOW! It is like Banana Bread meets Chocolate Chip meets Oatmeal Raisin Cookies (just w/o the raisin). I basically just threw all of it together and it worked out perfectly. The mashed banana adds sweetness so you can reduce the usual amount of sugar and butter. If you are after a unique and healthier cookie, look no further!

Makes 2 Dozen

2 ripe mashed bananas
1/2 cup brown sugar
1/4 butter, softened
1/4 sugar
1 tsp pure vanilla extract
1 large egg
I use 3/4 cup whole-wheat pastry flour and 1/2 cup all-purpose flour, or you can just useĀ 1 1/4 cups all-purpose flour
1 1/2 cups oatmeal (you may need 2 cups if too wet)
1/2 cup corn flakes, secret ingredient!
1/2 tsp salt
A few dashes of cinnamon
1/2 cup chocolate chips
Cooking Spray

1. Preheat oven to 350 F.

2. Combine first 5 ingredients in a large bowl; beat with a mixer at med. speed until smooth. Add egg; beat well.

3. Combine flour, oats, baking soda, and salt in a med. bowl, stirring with a whisk. Add flour mixture to banana mixture in bowl; beat with a mixer at med. speed until well blended. Stir in chocolate chips.

4. Batter will be wet, (if too wet add more oatmeal.) Drop batter by tablespoonful 2-inches apart onto baking sheets coated with cooking spray. Bake at 350 for 18 mins or until golden. Cool on pan for 2 mins. Remove from pans and cool completely on wire racks. Enjoy!
