Peanut Butter Oatmeal Cookies

So good… You can add more goodies too like nuts, raisins, and peanut butter chips. Either way they rule.  Make them, eat them, give some away, and freeze some too.  You will also love White Chocolate,Strawberry, and Oatmeal Cookies, Banana, Oatmeal, Chocolate Chip Cookies, and Heart-Healthy Chocolate Chip Cookies.  Enjoy~

1 1/2 cups flour
1/2 cup old fashioned oats
1/2 tsp baking soda
1/2 tsp salt
1 cup light brown sugar
1/4 cup non-hydrogenated vegetable oil
1/4 cup canola oil
1/4 cup creamy peanut butter
1 egg
1 tsp vanilla extract
1 cup chocolate chips

1. Preheat oven to 375. Combine flour, oats, bakingsoda, and salt in a medium bowl. Beat brown sugar, shortening, and oil with a mixer until smooth. Add peanut butter and beat until combined. Stir egg and vanilla into the peanut butter mix, blend until smooth.

2. Beat flour mixture into wet mixture and then add chocolate chips and mix. Scoop 1 tbs dollops on to an ungreased baking sheet. Flatten dough balls to 1/2 inch thickness with fingers.

3. Bake for about 12 minutes or until golden brown.
