I first heard about using watermelon in a salad when I had the pleasure to meet Meredith Brokaw in 2008. She has a fantastic cookbook called “Big Sky Cooking.” This is not her recipe but I can say I definitely got the idea from her! Anyway, I love the unique flavors here. Such a healthy, simple, and very refreshing salad.
NOTE: What is great here, is you can make all of this ahead of time, but keep the dressing separate and then just before serving, toss the salad with the dressing.
