I never really make Halibut. I might get it from time to time eating out, but hardly have I ever made it at home. So I am happy to have a recipe I like, that is easy too.
It is really the sauce that makes this so good. Lemon, Pesto, Basil, and shallots and a lil butter, mmm-mmm. I would make extra sauce to have on hand for rice, pasta, or toss with some vegetables too. Garnish with fresh Basil. Maybe some brown rice on the side and an easy green salad too. Feel good about this homemade meal and ENJOY!
Makes 4 servings
3 tbs butter, softened
1 tbs refrigerated pesto, or homemade if you prefer
1 1/2 tsp finely chopped fresh basil
1 tsp finely chopped shallots
1/2 tsp grated lemon rind
4 (6-oz) skinless halibut fillets
1/4 tsp salt
1/8 tsp freshly ground pepper
Cooking spray
1. Combine first 5 ingredients in a small bowl, stir until blended.
2. Heat a large nonstick skillet over med-high heat. Sprinkle fillets evenly on both sides with salt and pepper. Coat pan with cooking spray. Add fillets and saute 5 mins on each side or until desired degree of doneness, it should flake easily with a fork. Serve fish with butter mixture. Enjoy!
