Oatmeal Toffee Cookies

The key here is brown sugar and butter to go with almond toffee bits.  Not a lot of brown sugar and butter and toffee but just enought to hit the spot!  I love toffee bits and what a better way to eat them than on a cookie.  I love using oats here for that hearty texture.  Enjoy!

Makes 2 dozen

3/4 cup flour
1 cup old-fsahioned rolled oats
1/4 tsp baking soda
1/4 tsp salt
3/4 cup packed brown sugar
1/4 cup butter, softened
1 tsp vanilla extract
1 large egg
1/3 cup almond toffee bits

1. Preheat oven to 350 F.

2. Combine flour, oats, baking soda, and salt in a med. bowl; stir with a whisk. Place sugar and butter in a large bowl; beat with a mixer at med. speed until well blended, about 5 mins. Add vanilla and egg; beat well. Add flour mixture; beat just until combined. Stir in toffee bits.

3. Drop by tbs that are 2 inches apart on 2 baking sheets coated with cooking spray. Bake at 350 F for 11 mins or until lightly browned. Remove cookies from oven and cool completely on a wire racks.
