“King” Cupcakes

Here I go again with Peanut Butter and Banana together. They are based on the sandwich which “Elvis” loved which was a fried peanut butter and banana sandwich. If  it is a favorite of “The King,”  then I think it is worth trying out!

I love how these are lighter and I actually use this frosting for other treats as well. Also check out my other peanut butter and banana combos like Frozen Chocolate, Peanut Butter and Banana Loaf and “No-Bake” Chocolate, Peanut Butter, Banana Cookies with Oats. Enjoy~

12 Cupcakes

CUPCAKES:
1/4 cup butter, softened
1 cup sugar or sugar substitute
1/2 cup egg substitute
1/2 cup mashed ripe banana (about 1)
1 tsp pure vanilla extract
1 3/4 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup 1% low fat milk or soymilk

FROSTING:
1/4 cup 1/3 less fat cream cheese, softened
1/4 cup creamy peanut butter
3 tbs butter, softened
1 1/2 cup powdered sugar
Dash of salt
3 tbs chopped dry roasted peanuts

1. Preheat oven to 350 F.

2. Place butter and sugar in a large bowl; beat with a mixer on med. speed until blended. Add egg sub; beat well. Add banana and vanilla extract; beat 1 min.

3. Combine flour, baking powder, and 1/4 tsp salt in a bowl; stir with whisk. Add flour mixture and milk alternately to sugar mixture.

4. Line 12 muffin cups with papers; fill cups with batter. Bake at 350 F for 20 mins or until toothpick comes out clean when tested. Cool completely on wire racks.

5. To prepare frosting, combine cream cheese, peanut butter, and 3 tbs butter in med. bowl; beat until fluffy. Add powdered sugar, 1/2 tsp vanilla, and dash of salt. Spread frosting evenly over cupcakes; Sprinkle with peanuts. These are so tasty!
