Crunchy Cereal Fudge Cookies

Do you find yourself wanting to bake a batch of really good cookies but you don’t want all the guilt if say you happen to eat 7 in a row like I do? Well, boy do I have a cookie for you and you can feel good about it if  when you turn into the cookie monster.  One thing you will love with this recipe,  is this is a “one-bowl” cookie recipe, also my favorite way to bake. 😉 No mess=No Problem.

I use a Fiber Cereal here for an extra crunch and the health benefits.I also have made them with other healthy cereals so you can try these out in a number of varieties. These are super easy and tasty. 😉  These crunchy lil treats make great snacks too.

1 box Nature’s Path Fudge Brownie Mix
2 cups cereal (Fiber One, Puffins, or Go Lean Crunch are all good)
1/3 cup water
1 egg
1 tbs canola oil
2 tsp pure vanilla
1/8 tsp ground cinnamon
3 tbs mini semisweet chocolate chips

1. Heat oven to 350 F.

2. Spray a cookie sheet with cooking spray.

3. In large bowl, mix all the ingredients and stir until well incorporated.

4. Drop by rounded tbs with 2-inch apart on the cookie sheet.
