“Better for You” Crunch Bars

The name says it all.  I was not sure what I wanted to call these but taking one bite in to them, it was obvious.  These are similar to my Easy Moni Rice Crispy Treats.  Super easy and you may have all the ingredients already. The key is to make sure the cereal is well crushed so it can combine to the peanut butter.  NO CHEMICALS and NO PRESERVATIVES and a much better choice for the kiddos. 🙂

NOTE: I use brown rice syrup or (even maple syrup would work), mainly because I do not like (or like to use) corn syrup but if you have it, just know you can use it instead of brown rice syrup if you do prefer.

Try all my Moni Chocolate and Peanut Butter Treats!

1 3/4 cups NATURAL creamy peanut butter
1/2 stevia and 1/4 cup sugar, or use 3/4 cup sugar
3/4 cup brown rice syrup
1 1/2 cups chopped lightly salted, dry-roasted peanuts
3 1/2 cups whole-grain cereal, (I like to use Peanut Butter Puffins), finely crushed
Cooking spray
1/3 cup chopped dark chocolate

1. Combine first 3 ingredients in a heavy saucepan over med-high heat. Cook 4 mins or until mixture just begins to boil. Remove from heat; stir in peanuts and cereal. Spread mixture evenly into a 13 by 9-inch baking pan coated with cooking spray.

2. Place the dark chocolate in a small bowl and microwave for about 1 minute or until melted. Stir the chocolate well and then drizzle evenly over peanut butter mixture. Done!
