A “Lighter” Chocolate Ganache Cake

A simple one layer cake, you can make it up to one day ahead, just store in an air- tight container. My theory is to use lighter ingredients when possible, but then use a premium chocolate bar (the star ingredient after all!). What makes this fantastic… is the sea salt sprinkled on the top, it reminds me of a chocolate covered pretzel in a way…hmmmmmm.

Makes 8 Wedges

Cooking Spray
2 tsp cake flour
1 1/4 cups, sifted cake flour
1 1/2 tsp baking powder
1/2 cup packed brown sugar
1/4 cup butter, softened
1 large egg
3/4 cup evaporated fat-free milk
1 tsp vanilla extract
2 large egg whites
3 tbs dark brown sugar
2 1/2 oz dark chocolate, divided
1 tbs butter
1/4 tsp sea salt-secret ingredinet alert!

1. Preheat oven to 350 F.

2. Coat 1 (9-inch) round cake pan with cooking spray; dust with 2 tsps flour.

3. Combine flour and baking powder in a bowl; stir with a whisk. Place 1/2 cup sugar and 1/4 cup butter in a large bowl; beat with a mixer at med speed until well blended (about 5 mins). Add egg; mix well. Add flour mixture to sugar mixture alternately with milk, beginning and ending with flour mixture. Stir in vanilla.

4. Beat egg whites with a mixer at high speed until foamy using clean, dry beaters. Gradually add 3 tbs sugar beating until stiff peaks form. Gently fold half of egg white mixture into flour mixture; fold in remaining egg white mixture. Grate 1/2 oz chocolate; fold that into the batter. Pour batter into prepared pan. Bake at 350 for about 23 mins or until toothpick comes out clean. Cool in pan for 10 mins. Remove from pan; cool completely on wire rack.

5. Chop remaining 2 ozs of chocolate. Combine chopped chocolate and 1 tbs butter in a microwave safe bowl. Heat about 1 min, stir ever 15 secs. Spread chocolate evenly over the cake sprinkle with salt, (secret ingredient!) Now enjoy and savor this GOOOOOOOOD treat!
