When I think of applesauce I immediately think of my childhood and I have to admit the first thing I think of is-How applesauce is just for kids, meaning “kid food.” But I am slowly coming around here and not under estimating this snack again! I find applesauce makes for a great snack, perfect for in between meals and workouts. It is super good for you, gives you a little energy boost , and well…Tastes amazing.
I buy my apples at the Santa Monica farmers market. They are always spot on with freshness and taste and not to mention so affordable. Pink Lady’s are good for this. This is easy and you can handle it. Again, try it out and impress yourself and your friends/kids when you say you made it from scratch! 🙂
NOTE: You can also get your consistency just the way you like it, I like it slightly chunky so I don’t over mash. Plus, My secret ingredient is key!

Makes about 2 cups
5 1/2 cups chopped, peeled Pink Lady apples(about 4)
1/2 cup water
1/4 cup sugar
1 1/2 fresh lemon juice
1 2-inch stick cinnamon stick
1/4 tsp salt
Dash of almond extract (the secret!)
1. Combine first 5 ingredients in a large sauce pan; bring to a boil. Cover, reduce heat, and simmer 35 minutes or until soft. Discard cinnamon stick. Mash with a potato masher or to your desired consistency. I like it chunky. Stir in salt and extract. Done!
