Here is your Moni Meal. 🙂 You will love the fact that you can make this entire dish on the grill. So easy and great for a BBQ. Let’s not forget that it is so healthy and Delightful. Fast and easy ingredients too.
Serves 4
4 Anaheim chiles
Cooking spray
2 ears corn
1 cup diced tomato
1/4 cup cilantro, optional
6 tbs fresh lime juice, always fresh!
1 tsp salt, divided
1/2 tsp freshly ground pepper, divided
1 tsp cumin
4 6 oz skinless salmon fillets
1. Place chiles on a grill rack coated with cooking spray. Grill about 5 minutes on each side, until blackened. Place chiles in a zip lock plastic bag and seal. Let stand 5 mins. Peel chiles, cut in half and discard seeds, etc. Cut chiles in to strips.
2. Place corn on grill rack coated with cooking spray; grill 10 mins or until browned, turning occasionally. Cool and cut kernels from cobs.
3. Combine chiles, corn, tomato, cilantro, and juice; toss gently. Add 1/2 tsp salt and 1/4 tsp black pepper.
4. Combine remaining 1/2 tsp salt, remaining 1/4 black pepper, and cumin, stirring well. Run spice mixture evenly over both sides of salmon. Place salmon on grill rack coated with cooking spray; grill 4 minutes on each side or until fish is done to your desired degree of done-ness. Serve with relish.
