Fudgy Mocha-Toffee Brownies

With a tittle like this, do I really have to do any convincing…I mean seriously! 😉 What I love about brownies is they are actually very simple to make and pretty hard to mess up.

I love how these turn out. They are similar to a cookie bar that are rich and gooey.  Yes these are a “Lightened-Up Treats” version; less butter, less sugar, therefore less fat and calories.  I have made this with only “white” flour and also I have made this half white flour and half whole-wheat pastry flour.  They both turn out super.  I am a sucker for coffee and chocolate together and with the small toffee bits I add, this is truly a great brownie.

Makes 20

2 tbs instant coffee granules
1/4 cup hot water
1/4 cup butter
1/4 cup semisweet chocolate chips
1 1/2 cups all-purpose flour, you can use half whole-wheat pastry flour here
1 1/3 cups sugar or sugar sub
1/2 cup unsweetened cocoa
1 tsp baking powder
1/2 tsp salt
1 tsp pure vanilla extract
2 large eggs
1/4 to 1/2 cup toffee chips

1. Preheat oven to 350 F.

2. Coat bottom of a 9-inch square baking pan with cooking spray.

3. Combine coffee granules and 1/4 cup hot cup water, stirring until the coffee granules dissolve.

4. Combine butter ad semisweet chocolate chips in a small bowl and microwave on high for 30 secs to 1 min; stir until chocolate is smooth.

5. Combine flour, sugar, unsweetened cocoa, baking powder, and salt in a large bowl, stirring with a whisk. Combine coffee mixture, butter mixture, vanilla extract, and eggs in a med bowl, stirring with a whisk. Add coffee mixture to flour mixture, stir just until combined. Spread evenly into prepared pan. Sprinkle evenly with toffee chips. Bake for about 20-24 mins. Cool on wire rack.
