It’s GAME DAY!
You will love this super hearty, healthy and easy to make Mexican lasagna dish.
Think Mexican flavors with tortillas, beans, corn, salsa, chile con queso cheese, meat, all layered like lasagne. I know, right.
You don’t need too many ingredients and in fact, may have many of these already. Nothing fancy here. It’s game day – we are ready to go. Am I right?
The helpers in this dish definitely come from Desert Pepper, who have sent me some samples for a recipe contest! I love their products, so authentic and all award-winning straight from the great Southwest. So that is how I came up with this recipe. Then because it’s game day season, I thought this would be the perfect dish. So if you love Mexican and Lasagna then get READY. This recipe is also fantastic the next day as the layers really soak in together. This is so good we make it as a staple in our house.
Mexican Lasagna Dish
Ingredients:

4-5 tortillas of choice, I like Seite

2 tbsp of olive oil

1 cup red onion, diced

1 cup bell pepper mix

1 ½ cup black beans
-
1 cup corn
-
½ cup of Desert Pepper Salsa Cantina

1 lb of organic ground bison or beef
-
1 jar of Desert Pepper Chile Con Queso
Optional toppings: sour cream, guacamole, avocados, tomatoes, romaine lettuce
Directions:

Preheat the oven to 350 F. Over a medium heat pan, add 1 tbsp of olive oil. Add in the diced onion and bell pepper mix. Cook until soft and tender. Place in a bowl and set aside. Wipe pan out.

In a small bowl, add the black beans, corn and salsa. Mix well.

Using the same pan, add another 1 tbsp of olive oil. Add the ground meat and cook all the way through. Now add back in the onion/pepper mixture.

In a cheesecake pan, place the tortilla down. Add the meat mixture over evenly. Keep in mind you will have 2 layers for each mixture depending on what tortilla you use. Drizzle the cheese queso over. Add another tortilla and now add the bean/salsa mixture. Repeat this process 4-5 times.

Finish the last layer topping with the bean/salsa mixture and one more drizzle of the cheese queso.

Place in the oven for 20-25 mins. Let cool slightly before serving and even better as leftovers. Serve with all your favorite toppings. Enjoy!
