Anything But Bland Broccoli Pesto!
You heard right. This is the healthiest, easiest and most delicious entree or appetizer you could possibly whip up. Heck, even your next game day! There is also a secret sauce that makes all the difference. I was lucky enough to be sent some samples of Miller’s Banana Pepper Sauces for a recipe contest and I am beyond honored and thrilled. I am officially obsessed. We can’t go one meal without drizzling these sauces to compliment our meals in this house.
Unlike most pepper sauces, they only use vine-ripened peppers picked at the peak of freshness. Think a mix of mature banana and habanero peppers processed from scratch and mixed with a special blend of mustard seeds and spices to create a sweet and spicy superior flavor.
Now to my creation. This recipe is SO yummy! It is not only super easy but it is also packed with some super duper nutrition, healthy fats, fiber and flavor baby.
This is also great to sneak in some veggies for those picker eaters too. I keep this dairy free too by using sun-dried tomatoes instead of parmesan cheese. I also use walnuts in replace of traditional pine nuts. You can absolutely make this though any way you fancy. The key is the Miller’s Sauce.
It is just as filling as is, but you can also serve with your favorite protein, healthy pasta, crackers, crudités. Enjoy!
Anything But Bland Broccoli Pesto
Ingredients:
- 2 cups steamed broccoli
- 1 cup basil
- ¼ cup walnuts, or can use pine nuts
- ¼ cup sun-dried tomatoes (in replace of parm cheese)
- 1 garlic clove
- Hit of lemon juice
- Salt + pepper to taste
- 2 tbsp Miller’s Banana Pepper Sauce – Mild
- 1-2 tbsp water if needed (or use traditional olive oil to thin out), optional
Directions:
- In a food processor, place all the ingredients through to salt and pepper. Mix until well blended. Next based on the texture, see if you need to add in water or oil.
- Blend and enjoy.
Serve as is for an entree or with your favorite protein, crackers, crudités, pasta, or along with any dish. Even a healthy game day!
