4 Easy Brunch Recipes

Who is coming over for an amazing and very satisfying BRUNCH!?

 

There is something about a delicious and well planned brunch. Always fun to look forward to. Well, you are in for an easy to put together brunch for your next brunch get together. Here are four super easy, fast and delicious recipes to try! We have something for everyone today and these scrumptious recipes are not only easy to make, but are also healthy too.

 

Think avocado toast with a heavenly twist to make your mouth water. 

Next up, enjoy a hearty egg and double cheese bagel with just the right seasonings and spicy flavors.

If you want something on the lighter, low carb side, I got you with my easy peezy sweet turkey cream cheese roll ups with a special flavor explosion smack dab in the middle.

And finally, one of my favorites is this grilled cheese that goes savory and sweet all in one. Mmm-delish!

Avocado Toast with Peach Mango Salsa

Calling all avo-toast lovers! This is for you and you will love the sweet background on this clever version. I also like to add the cucumber for a perfect crunch to go along with the soft chewy bites. Could not be any easier! Enjoy. 

 

Ingredients:

 

  • 2 slices of bread (your choice)

  • 1 ripe avocado

  • 1 mini cucumber, sliced

  • Salt and pepper to taste

  • ½ cup Desert Pepper Peach Mango Salsa

 

Directions:

  1. Toast the bread until golden.

  2. Prepare the avocado by mashing the avocado in a bowl. Pro tip: can add lime or lemon juice to keep the color fresh (but is optional). Add salt and pepper.

  3. Spread the mashed avocado on the toasted bread.

  4. Next add 3-4 cucumber slivers for that nice crunch.

  5. Top with the peach mango salsa on each slice.

Enjoy as a delicious brunch, breakfast, lunch or snack! 



Hearty Egg and DOUBLE Cheese Spice Bagel Sandwich

Not too sure I have met anyone who doesn’t love a bagel packed with taste and heartiness! Love just the right dose of spice from the seasoning and salsa with this easy recipe. This recipe makes for one bagel. Repeat the process for how many you need to make. 

 

Ingredients:

 

  • 1 bagel of choice, sliced

  • 1 slice of cheddar cheese (or cheese of choice)

  • 1 fried egg

  • 1 tbsp of cream cheese

  • Handful of spinach

  • 2 tbsp of Desert Pepper Cantina Salsa

  • Seasonings: everything but the bagel and/or crushed red pepper flakes 

 

Directions:

 

  1. Cut the bagel in half and toast it. 

  2. Next fry an egg in a pan and place your cheese on top until just melted, set aside.

  3. On one slice of the bagel, spread cream cheese. Next add your favorite seasonings. I like everything but the bagel seasoning and a sprinkle of crushed red pepper flakes. On this same slice, add your fresh spinach.

  4. Now place the slightly cooled egg with the melted cheese on the other slice of the bagel. Add 1-2 tbsp of the salsa. 

  5. Can serve open faced or simply put it all together and get ready for some flavor.

Easy and done!

 

Easy Peezy Sweet Turkey Cream Cheese Roll-ups

I find everyone appreciates a spread with some variety and this is for the lighter option that is protein packed and low carb. But don’t be fooled, the flavor is so fantastic and these might just take you 5 minutes to make in total! 

 

Ingredients

 

  • 2 organic turkey slices

  • 2 tbsp cream cheese, divided

  • 2 loose leaf romaine lettuce leaves, divided

  • 2 cucumber slices, thinly sliced divided

  • 2 tbsp Desert Pepper Peach Mango Salsa, divided

  • Salt and pepper to taste

 

Directions:

 

  1. Place the turkey slices on a cutting board or plate.

  2. Spread 1 tbsp of cream cheese over each piece.

  3. Next add 1 loose leaf romaine lettuce on each.

  4. Place the thinly sliced cucumber over. Pro tip: make the shape of a burrito for the salsa.

  5. Now place the peach mango salsa in the cucumber avoiding any water. 

  6. Add salt and pepper to taste.

  7. Now roll up from one end tightly. Cut in half and insert a toothpick to put together. Make as many as you need repeating the process. 

Perfect for an anytime snack or recipe to enjoy with all!

 

Last but not least…

 

Sweet and Savory Grilled Cheese 

There is just something about a fresh, warm, ooey-gooey, crunchy grilled cheese. Yep, this I can promise will be a hit and we get to marry both worlds of savory with sweet. Get ready.

 

Ingredients:

 

  • 1-2 tbsp of butter

  • 2 slices of bread (of your choice)

  • 1 slice of organic ham (or turkey)

  • Slices of a red onion

  • 1 slice of cheddar cheese (or of your choice)

  • 2 tbsp of Desert Pepper Peach Mango Salsa

 

Directions:

 

  1. Spread the butter on the bread. Over a medium heat pan, place one piece down. Add the red onion.

  2. Next place the cheese slice over

  3. On top of the cheese place the ham.

  4. Next place 1-2 tbsp of the peach mango salsa.

  5. Place the other piece of bread with butter on it.

  6. Cook 2-4 mins each side until golden brown. Pro tip: I like to put a lid over to get that nice crunch. 

Enjoy with some fresh veggies on the side and don’t forget an extra side of the peach mango salsa for extra dipping! 


So there you have it. You are completely covered for your next brunch and if you make all four of these recipes, you can even save money using some similar ingredients too.

You can also use this same coconut cream again and just serve with your favorite fresh berries all season long! Enjoy. 

GRILLED PINEAPPLE WITH COCONUT CREAM
🍍🍍🍍

INGREDIENTS

For the Marinade:
• 1 tbs coconut oil (can also use olive)
• 1 tsp  ground cinnamon
• 2 1/2 tbs dark honey
• 1 vanilla bean (can be optional – but I love it here)
• 1 tbs of fresh lime juice
• 1 firm yet ripe pineapple, can buy already cut
For Garnish (Optional):
• 1 tbs dark rum
• 1 tbs grated lime zest from the lime
My Coconut Cream:
• 1 cup heavy cream
• 1/2 cup cream of coconut (such as Coco Lopez)

DIRECTIONS

Marinade:
1. In a large bowl – combine the oil, cinnamon, honey, vanilla bean (if using), and lime juice; whisk to well to blend together. Set aside.
2. Place each pineapple half cut-side down and cut it lengthwise into four long wedges; slice away the core. NOTE: Or you can slice it in rings too, which I do often. 
3. Place the pineapple in the bowl with the marinade and stir to coat the pineapple. Heat up the grill.
4. Place on the grill and cook about 3 to 4 mins. You can baste once or twice with the remaining marinade. Turn the fruit and move it to a cooler part of the grill or reduce the heat. Baste again with the marinade. Grill until the pineapple is tender and golden, about 3 more mins.
5. Remove the pineapple from the grill and place on a platter. Next, brush with the rum – if using. Last, sprinkle with the lime zest. Serve hot or warm!

For the Coconut Cream:
1. With an electric mixer, beat the heavy cream and cream of coconut until soft peaks form. TIP: You can also use this same cream again and just serve with your favorite fresh berries all season long.

So perfect for a summer treat with friends. Enjoy!
Let’s make my GREEN ME UP smoothie! I’ve been Let’s make my GREEN ME UP smoothie! I’ve been making this smoothie or a variation of it for the past 13-14 yrs, heck before there was TikTok. 😂 Such a delicious way to pack in some serious nutrition and those GREENS. 

Smoothies are an incredible tool to your wellbeing. They are super easy, versatile, and gosh dang - delicious and healthy. (If made correctly). That’s why I’m all about getting my clients on the smoothie train - if they’re up for it. 😉 

Just love providing clients with dozens of smoothie recipes I’ve created packed with protein and fiber, including healthy fats that keep you full 3-5 hrs easily. No matter what season of life I’ve been in personally: serious training, fitness modeling, both pregnancies/postpartum/nursing, healing, and now being a busy mom feeding our kids smoothies each morning, smoothies have been an essential piece.

This is a loose recipe so you can add anything else you want. Just make sure you have your protein source, your favorite veggies (hello phytonutrients), fiber sources and healthy fat. 

** Tip: put all the ingredients (EXCEPT the liquid) in the blender the night before! This tip has helped for years.

🥬GREEN ME UP SMOOTHIE🥬

• Handful of organic greens
• 1-2 cups organic celery (vitamins A, K, C, hydrating, supports digestion)
• 1/2 cup frozen cauliflower rice (makes it thick, extra fiber)
• 1 Brazil nut (gives daily selenium, which is important for fertility)
• 1/4 of an avocado
• 1/4 cup wild blueberries
• 1 tsp organic spirulina @nowfoodsofficial 
• 1/4-1/2 ceylon cinnamon (helps regulate blood sugar, antioxidant)
• 1 scoop @paleovalley bone broth powder
• 1 scoop whey - I like isolate and @nowfoodsofficial has a good one
• Creatine @nowfoodsofficial (fav supplement for 10+ yrs)
• 6-8 oz of unsweetened almond or coconut milk
• 1 scoop of @beeyawellness for topping, optional 

Other options I rotate in: ginger root, basil & chia seeds, psyllium husk powder, lemon (vitamin C), herbs like cilantro & mint, dandelion greens (great source of vitamin K).

1. Place everything in a HIGH-speed blender (yes this is important. Otherwise you’ll get salad texture). Blend for about 1 min. Enjoy!

Recently Asher rushed home from school and said “I’m working out for 10 mins to get strong.” Followed by “then I can break free from all the hugs.” We learned that apparently 3 girls at recess hug Asher nonstop and he wants to get strong to “get away from all the girls.” 😳 Never a dull moment.
