This is so easy and not too bad for ya (for a lil treat!) I absolutely LOVE chocolate and ginger together and here I add even more by using some hazelnuts and dried cherries. The outcome-WOW! Plus, let’s not forget these ingredients still do contain ANTIOXAINDANTS… 😉
Great for gifts and the Holidays. Give yourself sometime to let the bark freeze for 1 hour.

Serves about 10
3/4 cup hazelnuts
1/3 cup dried cherries, coarsely chopped
2 tbs finely chopped crystallized ginger
6 ounces bittersweet chocolate, (good quality) chopped
1. Preheat oven to 350 F.
2. Place hazelnut’s on a baking sheet. Bake for 20 mins, stirring once halfway through. Turn nuts out onto a towel. Roll up towel; rub off skins. Coarsely chop nuts. Combine nuts, cherries, and ginger in a med. bowl.
3. Place chocolate in a microwave-safe bowl. Microwave on HIGH for about 1 min or until chocolate melts. Add to nut mixture, stirring until combined. Spread mixture evenly on a jelly-roll pan lined with foil; freeze 1 hour. Break into pieces and serve. Enjoy!
