So…Pound Cake. How do you lighten up pound cake? It is not the easiest recipe to tweak and that is why the first ingredient is a stick of butter. 🙂 However, you need it and we are talking about Pound Cake here! This makes a very tasty, “lightened-up” cake that will not disappoint. A great trick as always is Greek Yogurt, fat-free sour cream, egg whites, banana, and oat flour. So yes there is butter, but compared to your typical pound cake, this is so much lighter.
Serve with fresh berries and everyone will love a slice.
Makes 12 Servings
1 stick butter, softened
1 1/2 cups sugar
1 banana, mashed
1/2 cup nonfat Greek yogurt
1/2 cup fat-free sour cream
3 eggs
3 egg whites
3 cups oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
Cooking spray
3 cups fresh mixed berries
2 tbs powdered sugar
1. Preheat oven to 325 F.
2. Cream butter and sugar in a bowl with an electric mixer on med speed for about 1 min. or until well blended. Add banana, yogurt, and sour cream; beat on low speed until combined.
3. Whisk together eggs and egg whites in a separate bowl. Sift oat flour and the next 3 ingredients (through salt) in a large bowl. Add butter and egg mixtures alternately into oat flour mixture.
4. Add vanilla, and pour batter into a 10-inch tube(bundt pan) that is coated with cooking spray. Bake 1 hour or until a toothpick comes out clean. Serve toasted and top with fruit and powdered sugar. Enjoy!
