You might fall over after one bite! This is good to make and have in the freezer(good for about 1 month) for a go to treat. It is very RICH like fudge but that is a good thing! I love bananas and peanut butter together plus this calls for 5 ingredients total, again so SIMPLE. You need to use the heavy cream so it can actually freeze. Give some away, save some in the fridge or freezer, and have some fun.
Serves 16
2 ripe bananas
12 oz semisweet chocolate, chopped
3/4 cup creamy peanut butter
1/2 cup roasted salted peanuts
1 cup heavy cream, whipped to stiff peaks (2 cups)
1. Coat an 8 1/2 by 4 1/2 inch loaf pan with cooking spray; line with waxed paper; leaving overhang on both long sides. Set aside.
2. Melt chocolate; cool to room temperature. Meanwhile, in a food processor, puree bananas until smooth.
3. Stir peanut butter into cooled chocolate until combined, then stir in banana puree. Gently fold in whipped cream until combined. Pour into prepared pan; top with peanuts. Fold waxed paper over top; wrap tightly in plastic. Freeze until firm, about 3 hours.
4. To serve; remove loaf from pan and slice about 1/2 inch thick. If you want to, you can just re-wrap and freeze for about 1 month.
