Tomato Soup Heat with Melted Cheese Treat

I am all about being a part of a recipe contest featuring the best sauces I now know of called Miller’s Banana Pepper Sauces. I am so honored and grateful to be a part of it (truly) and seriously these sauces – rock!
Okay so I am back with a must try recipe for your next entree or meal. You can use Miller’s sauces that include mild, hot or habanero sauces and they are all perfect for this recipe. I use hot. I omit heavy cream but you can certainly add a few tbs at the end if you are after that creamy tomato soup.
This sauces are so special. Unlike most pepper sauces, they only use vine-ripened peppers picked at the peak of freshness. Think a mix of mature banana and habanero peppers processed from scratch and mixed with a special blend of mustard seeds and spices to create a sweet and spicy superior flavor. Then what also excites me is the ingredients are simple and high quality, no junk.soup is special.
Now this soup entree is also so special. Think sun-dried tomato and diced tomatoes mixed together. Double-tomato power. I know…and with a drop of fresh basil, it is a dream. Then with a hit of banana pepper sauce, it just elevates the flavor once more! Then the texture is my favorite.
Besides tasting so good, it also is still so healthy and good for you too. Name one combo that can beat homemade tomato soup and grilled cheese. Right?!
The carrots give it a little sweetness and the onions really create the texture. Great anytime of the year, especially now in January.
Tomato Soup Heat with Melted Cheese Treat
Serves 6
Ingredients:
- 1 tablespoon butter
- 1 cup chopped onion (1 medium)
- ¾ cup shredded carrot
- 1 tablespoon minced garlic
- 1 tablespoon minced shallots
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon salt
- 10 large basil leaves, divided
- 3 drained sun-dried tomato halves, packed in oil with herbs (such as California Sun Dry brand)
- 2-3 Miller’s Banana Pepper Sauces (mild, hot or habanero all work – I use hot flavor) *have extra for also dipping in your grilled cheese
- 2 (14.5-ounce) cans organic diced tomatoes, undrained
- 1 (14-ounce) can fat-free, less-sodium chicken broth
Directions:
- Melt butter in a large saucepan over medium heat. Add chopped onion, shredded carrot, garlic, and shallots to the pan, and cook for 5 minutes or until vegetables are tender, stirring frequently. Add pepper, salt, and 4 basil leaves, and cook for 5 minutes. Add sun-dried tomatoes, Miller’s sauce, diced tomatoes, and broth, and bring to a boil. Reduce heat, and simmer for 1 hour.
- Remove from heat. Place half of the soup in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Blend until smooth.
- Pour into a large bowl. Repeat the procedure with remaining soup. Divide soup evenly among 6 bowls. Garnish each serving with 1 basil leaf.
- Next, make your favorite grilled cheese. Keep some of the Miller’s sauce around to have for extra dipping.
- Dip the grilled cheese in the soup and be a very happy human. Thank me later and enjoy!
