Chicken Parmesan
From a zesty keto chicken piccata to a spicy pulled jerk chicken – there are so many diverse ways to cook this worldwide favourite and we have an amazing recipe for you here today. Packed with flavour but without the same fat content as a traditional chicken Parmesan – this is a great Friday night meal for you in winter that is sure to get the whole family excited.
Ingredients:
2 chicken breasts, butterflied
1 tbsp butter
1 tbsp flour
1 tsp cornflour
Salt and pepper
3 tbsp oil
60g fresh grated Parmesan
1 mozzarella ball
250ml your favourite tomato sauce
Basil leaves
Bash your chicken with a rolling pin to help tenderise the meat as well as flatten it for quicker cooking.
Melt your butter and brush it over the chicken.
Mix the flour and cornflour in a bowl and season with salt and pepper. Sprinkle this over the chicken on all sides and pat down the stick.
Heat up a frying pan with oil and then add the chicken. Pan fry for 4 minutes on each side until crispy and tender. Remove from the pan.
In a baking dish, add half of your tomato sauce and spread it. Place your chicken over the top.
Add the rest of the sauce.
Sprinkle on some Parmesan and add sliced mozzarella.
Bake for 20 minutes until melted and bubbling.
Top with basil leaves.
Steak stir fry
A zingy and herby stir fry is all you need to bring some flavour to your week with lots of added protein. This stir fry has some amazing Thai flavours and will make you feel amazing when you eat it.
Ingredients:
250g rump steak
Salt and pepper
Olive oil
Coconut oil
1 red chilli
1 spring onion
1 star anise
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp dark soy sauce
Juice of 1 lime
1 small bunch coriander
250g cooked noodles
200g beansprouts
Heat up a pan with 1 tbsp coconut oil. Add the ginger paste and garlic paste along with your star anise. Cook for 1 minute.
Chop your chilli and spring onion and add to the pan.
Chop your steak into thin strips. Season with salt and pepper and drizzle with olive oil.
Add the steak to the pan and cook through.
Add dark soy sauce, lime juice, and coriander.
Add your bean sprouts and cook for 1-2 minutes.
Stir in your noodles and serve.
