I had never heard of Banana Bars until I came across this recipe from Cooking Light a few years back. Anytime you roast a banana, I am game. I changed it slightly, added my Moni tweaks, and they turned out great. The original recipe browns the butter which I also recommend, that way it enhances the richness and you do not need full-fat cream cheese for the frosting, -which is amazing by the way. Takes a little more time than I like, but worth it! Cake flour and buttermilk are also key here. Enjoy!

2 cups sliced ripe bananas (turns out to be about 3)
