Can I just say how good Chocolate and Coconut are together. YUM…So good with a coffee or espresso. You do not need a ton of sugar which is great. 🙂 They are low-fat and the texture is what makes them.

4.5 oz all-purpose flour, about 1 cup
1 cup quick-cooking oats
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup packed brown sugar
6 tbs sugar
1/4 cup organic butter, softened
1 large egg
3/4 tsp vanilla extract
1/4 cup flaked sweetened coconut
1/4 cup finely chopped DARK chocolate
Cooking Spray
Makes 2 dozen
1. Preheat oven to 350.
2. Combine flour, baking powder, baking soda, and salt in a bowl; stir with a whisk.
3. Place sugars and butter in a large bowl; beat with a mixer at med speed until well blended. Add egg, beating well. Beat in vanilla. Add flour mixture to butter mixture; stir until combined. Stir in coconut and chocolate.
4. Get 2 baking sheets out. Spray with cooking spray. Divide the batter into 24 portions and roll 12 balls on to each baking sheet. Flatten with your hand and bake one sheet at a time at 350 for 15 mins or until tops are set and the bottoms are slightly brown. Cool on wire racks. So good!
