This is such a delicious, healthy salad. I just love Persimmons and they of course are in season right now. If you have not tried a Persimmons, PLEASE do, you will adore them. This is also so colorful for presentation. You will love this BEAUTIFUL Seasonal Salad and it is full of flavor and great for you. Get ready for a killer salad dressing too, minus all the crap preservatives, I got your back. 😉 VINAIGRETTE: 1 Tbs balsamic vinegar 2 tbs fresh lemon juice 2 tbs orange juice 1/2 tsp sugar 3 tbs extra-virgin olive oil 1/4 tsp lemon zest 1/4 tsp salt 1/4 tsp freshly ground pepper SALAD: 4 cups spring mix salad greens 2 small ripe Fuyu persimmons, each cut into wedges 1 cup crumbled blue cheese, (4 oz) 1/4 cup walnuts 1/4 cup pomegranate seeds 1. For the dressing, combine first four ingredients (through sugar) in a med bowl. and mix well. Whisk the oil in slowly. Add the lemon zest, salt, and pepper; mix well. 2. Divide the greens equally onto 4 plates, and distribute equal portions of the persimmon wedges, blue cheese, walnuts, and pomegranate seeds. 3. Drizzle with the vinaigrette, and serve.
